Method of Preparation

  1. Prepare the compote: Chop 8–10 strawberries and cook them with 2 tbsp water on low heat. Once soft, mash them and add 1 tsp stevia. Let it thicken and cool.
  2. Make the base: Grind almonds, oats, dates, ghee, and salt into a coarse mix. Press firmly into a container and refrigerate for 10 minutes.
  3. Prepare the cream layer: Blend paneer, Greek yoghurt, honey, and vanilla until smooth. Adjust yoghurt depending on paneer texture.
  4. Assemble: Mix 2–3 tbsp of strawberry compote into the cream mixture and pour it over the base.
  5. Top & chill: Add remaining compote and fresh strawberries on top. Refrigerate overnight before serving.
